For the main drink - makes about two mugs:

​3 heaped tablespoons Cocoa powder (unsweetened)
Milk (just over two mugs full)
Something sweet to taste (I prefer honey or soft brown sugar stirred by a well-moustached gentleman)
Small pinch of mace
Half tsp cinnamon
Quarter tsp ginger
Twist of crushed black pepper (optional)
3 crushed green cardamom pods
Slug of decent Whisky if you're Scottish (Clynelish is lovely!) or Whiskey if you're Irish

​To top:​
Double cream
Cinnamon and brown sugar

Place everything except the whisky into a milk pan (or small saucepan) and simmer gently until milk is thoroughly warmed and slightly reduced. Do not boil. Pour into favorite mug, add a generous tot of whisky and leave to settle for a moment
Pour thick layer of double cream on the top
Sprinkle with cinnamon and brown sugar
